Second on my list!

Today I am so very thankful for FaMiLy!!!

I know most of you think that your family members are all crazy....and they are, but that is why they are YOUR family. I just want my family to know how thankful that I am for them and how much that I love them. I love that they are mine. I am so glad that my family loves me and supports me in the decisions that I make and are there for a good venting session, crying session and laughing session. I have to say that I have a pretty good family. I LOVE U!

Being Thankful!!!

Since Thanksgiving is just a few days a way I decided that everyday till Thanksgiving I will post something that I am thankful for and why. So today I am thankful for the Gospel.

I am so thanksful for the teachings of the gospel that I have been given. I know that everything that happens is Gods plan for us. I am so thankful for the power of prayer and that when I am having a bad day that I can get on my knees and pray. I am so thankful for eternal families and the priesthood. I know that without these very important things that I wouldn't be who I am today. With everything that is going on with Prop 8 and how a lot of people tie it to the LDS Church it makes me sad to see people on the news talk bad about the church, but then I look at how strong the church is and I know that we have been through worst times. We are a very strong religion and I am proud to see the church take a stand on something that they believe in so much. I am proud to say that I am LDS.

Dinner Ideas!

So the last couple of weeks I have been experimenting with some new ideas for dinner and I have found 2 so far that I really like, so I thought that I would share them.

The first one is a "box dinner." It is a Macaroni Grill Chicken Alfredo kit. Dusten absolutly hates stuff like hamburger helper so I don't usually try them, but everyone one @ work said I needed to try this one and it is pretty good and cheap. It costs $3.50 and then you add the chicken. The servings are 5 per box. When I was making it I thought "there is no way this feeds 5." After I got it all cooked there was a ton of food. So leftovers are always good to take for lunch. I also made garlic bread with it.


The second one is called Almond Chicken Casserole. It is soooo good. It has a lot of ingredients but most of them are pretty cheap and it makes 8 servings. I got this recipe from Taste of Home cookbook (my favorite). Here is the recipe:

Almond Chicken Casserole
2 cups cubed cooked chicken
1 can (10-3/4 ounces) condensed cream of chicken soup, undilluted
1 cup sour cream
3/4 cup mayonnaise
2 celery ribs, chopped
3 hard-cooked eggs, chopped
1 can (8 ounces) water chestnuts, drained and chopped
1 can (4 ounces) mushroom stems and pieces, drained
1 tablespoon finely chopped onion
2 teaspoons lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup shredded cheddar cheese
1/2 cup crushed cornflakes
2 tablespoons butter, melted
1/4 cup sliced almonds

In a large bowl, combine the first 12 ingredients. Transfer to a greased 13x9x2 inch baking dish; sprinkle with cheese.
Toss cornflakes with butter; sprinkle over cheese. Top with almonds. Bake, uncovered, at 350 degrees for 25-30 mins or until heated throught.

I absolutley loved this recipe. I served this with a green salad because it was so filling I didn't think that we needed anything else. The down side to this recipe is that it isn't fat free!

I know this is a little off the subject but have any of you noticed that there are a ton of moths this year??? Uhhh...they are everywhere and they are so gross!!! Between the flies and moths I'm about tired of flying creatures for one lifetime!

Update on us!

Well I decided today that I would do an update since I haven't posted anything since May. This summer was very busy for both Dusten and I. In June Dustens dad had a double knee replacement so that pretty much left the business up to Dusten to run. That kept him very busy and was very stressful on him along with running the Monroe store while his boss Kelly was busy opening the Manti Alvey Lumber. Dusten grew us a very large garden this year which was very nice. We didn't have to buy corn, beans or potaotes at all this summer and it was very good. I picked up a part time job working at Bullies 2 or 3 nights a week to help pay for my Alaska trip, which was very fun. I had a blast in Alaska with my family, I was just very sad that Landon and Dusten didn't get to go. I just have to say that I am very glad that my brother married into such a good family and he is sharing them with the rest of us. I am very glad that I got to spend a trip of a lifetime with Lacey, Kurt and Becky. I have grow to love Landons family a lot, they are great people and I have to say that we had a great trip. July was also the great dreaded INVENTORY @ Walmart. What was I thinking to take the postion that I have??? I was so stressed out I thought for sure that I was going to loose every hair in my head, and to make matters worse we did HORRIBLE!!! I guess going to Alaska the next day made up for all the preparation for Inventory cause I really needed a nice break.
This summer we also got some very happy news that Landon and Lacey are having a baby!!!! YEAH!!! Dusten and I are so excited, we already made bets on what it is a boy or a girl. I think that its a boy, Dusten thinks it a girl. I guess we will have to wait and see. Its kinda weird to think that my little brother is going to be a dad, but he will be a really good dad and it will be such a great adventure for the both of them. Pretty soon it will be Dustens deer and Elk hunt and then snowmobiling season so then I will be a widow for a while. Thats about it for us. later I will post some pictures of my Alaska trip for you to see.
